
A mixture of chopped tomatoes, onion, garlic, and blue cheese is spooned on top of toasted slices of sourdough bread.
Spray or brush a cookie sheet lightly with some of the olive oil. Place each piece of bread, cut side up, on cookie sheet. Drizzle each slice of bread with olive oil and a little balsamic vinegar. Bake at 350F for 5-10 minutes, or until just toasted.
Place chopped tomatoes, onion, crumbled blue cheese, garlic & fresh pepper in bowl; mix all with 4 tsp olive oil and 1 tbsp balsamic vinegar. Let this marinate about 15 minutes in fridge. Place some tomato mixture on top of each piece of bread. This goes good with an Italian dish.

This is a very tasty dish. It can be eaten by vegetarians also.
