Al Fresco Dip

This Italian style spread is made with garbanzo beans, tomatoes, olives, garlic and basil--tastes great on grilled Italian bread.
 

Ingredients

  • 2 cans of garbanzo beans,(16 oz each) drained, do not rinse
  • 2 Tbps extra virgin olive oil
  • 3 large basil leaves
  • 1/4 cup olives cured in hot pepper
  • 1 medium tomato, without its juice and seeds and chopped
  • 1 small garlic clove chopped fine
  • salt to taste

Method

Place beans in microwave safe dish and reheat till hot. Place beans and the rest of ingedients in food processor and pulse just to a coarsely texture. Serve warm on grilled Italian thick slices of bread.

 

Notes: For tuna lovers add 1/4 cup white tuna in oil, drained, and add AFTER processing in food processor, mix thoroughly. You may want to brush the bread with olive oil and rub with the cut edge of a garlic clove before grilling.
