Anchovy Tart

If you are looking for a recipe that puts anchovies on display, this tart is for you. Use this as an appetizer or in addition to brunch.
Ingredients
- 1/2 cup vegetable oil
- 2 tablespoons milk
- 1 1/2 cups all purpose flour
- 1 (2oz) can flat anchovies, drained and chopped
- 1 (14.5 oz) can diced tomatoes, drained
- 1 teaspoon lemon juice
- 1 cup grated cheddar cheese
- 1/2 pint cream
- 2 eggs
- Paprika
- Fresh parsley and assorted olives for garnish.

Method
Preheat oven to 300 degrees F. Beat together the oil and milk and add the flour mixing to make a soft dough. Press dough into the bottom of an 8 inch square baking dish. Layer with the cut anchovies and top with the tomatoes. Sprinkle over the lemon juice and top with the grated cheddar cheese. Beat the cream with the eggs and pour over. Sprinkle the top with a little paprika. Bake for 45 minutes or until set.
