Apple Cheddar & Pecan Pizza

Apple, cheddar, and pecans with a sweet sauce and on a pizza crust. This makes a great snack or a great dessert.
Ingredients
- Cooking spray
- 1 twelve-ounce can refrigerated pizza crust dough
- 3 large Granny Smith apples, peeled, cored and thinly sliced
- 1 cup apple juice
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1 tablespoons light brown sugar
- 1/4 cup pecan pieces
- 1 cup grated white cheddar cheese

Method
Preheat oven to 425 degrees. Lightly coat a 14-inch pizza pan with cooking spray. Press dough into the pan. Put apples and juice in a saucepan; simmer until tender. Drain off juice and reserve. Spread apple slices over dough. Return reserved apple juice to saucepan; stir in cornstarch, cinnamon and brown sugar. Cook over medium heat until clear. Spread sauce over apples. Sprinkle pecans over apples. Top with cheese. Bake for 15-20 minutes or until crust is golden brown.
Notes: This variation on a beloved theme is a welcome brunch treat. It can also be cut into squares and passed at a cocktail party.
