Apricot Glazed Grilled Shrimp

This dinner is sure to make it feel like summer no matter what the season. Use this as an appetizer or as a snack durung the big game.
 

Ingredients

  • 2 to 3 lbs of raw jumbo shrimp
  • 15, peeled and deveined, leaving tails on
  • 1 jar of apricot jam
  • 1/2 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1/4 teaspoon salt
  • Fresh ground pepper to taste (about 10 to 15 grinds)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon old bay seasoning
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon thyme (dried preferred)
  • 1/4 teaspoon onion powder

Method

In a large bowl, combine peeled and deveined shrimp together with all ingredients, mix well using a large spoon or gloves on your hands. Marinate for a minimum of 20 minutes or overnight, for best flavor. Preheat your favorite tailgating grill, or charcoal grill, remove shrimp from marinade and place onto preheated grill. Cook for approximately 2 to 3 minutes per side. Remove shrimp and serve hot or chilled. In the mean time, or before grilling, place marinade in a sauce pan and heat to 165 degrees. Reduce heat and continue to heat for 15 minutes or until marinade has reduced by 1/4 to 1/2. Place shrimp on a serving platter, drizzle with marinade reduction and serve. Place remaining marinade reduction in a small serving bowl with spoon for guests who want more with their shrimp.
