Artichoke Olive Tapenade

A traditional Mediterranean dish with black and green olives, artichokes, olive oil and garlic.
 

Ingredients

  • 12 artichoke hearts, quartered
  • 1 cup green olives, pitted
  • 1/2 cup black olives, pitted
  • 1 shallot, chopped
  • 2 garlic cloves, chopped
  • 1 lemon, grated (rind only)
  • 1/2 cup olive oil
  • Salt and pepper to taste

Method

Place all ingredients in bowl of food processor and pulse until coarsely chopped. Allow flavors to meld for at least four hours.

 

Notes: The olive oil and garlic should add noticeable flavors. Serve with crostini rubbed with garlic.
