Artichoke Spaghetti

This easy and healthy dish is great as an appetizer or a side dish. It is also a healthy vegetarian option.
 

Ingredients

  • 1 medium size spaghetti squash
  • Non-fat spray butter
  • salt and pepper
  • 1 cup low-fat shredded mozzarella cheese
  • 2 tbsp artichoke antipasto spread

Method

Preheat oven to 350 degrees. Cut squash in half, and scoop out seed middle, spray liberally with butter, salt and pepper to taste. Place squash, meat side down, on cookie sheet, bake for 30 minutes. Remove squash from oven, and carefully spoon out meat into a large mixing bowl. Stir in cheese and artichoke spread, enjoy!

 

Notes: This recipe is great for a main dish, but we have also had it as a healthy side dish for grilled chicken and tuna steaks.

 

Number of Servings: 2 - 4, depending on use
