Artichoke Stuffed Mushrooms


This appetizer is made with cream cheese, artichokes, and Swiss cheese stuffed in a mushroom cap and topped with crispy cracker crumbs.



Ingredients:

  • 1 (8 oz) package garden vegetable  cream cheese
  • 1 jar (6 1/2 oz) marinated artichoke hearts, drained and finely chopped
  • 1/4 cup shredded Swiss cheese
  • 1 tsp Herbes de Provence
  • 2 Tbsp finely chopped green onion
  • 3 dozen large fresh mushrooms, stems removed and chopped
  • 2/3 cup finely crushed butter-flavored round crackers

Method

In a mixing bowl, beat cream cheese until smooth. Stir in the artichokes, chopped mushroom stems, cheese, herbs and onion. Spoon cheese mixture into mushroom caps. Sprinkle lightly with cracker crumbs. Place on cookie sheets that have been sprayed with cooking spray. Bake at 350 degrees for 15 to 20 minutes or until mushrooms are tender.

Notes: These are really yummy.
