Asparagus-Feta Pizza

These appetizer bites are made with a whole grain crust, topped with asparagus, zucchini, yellow summer squash, and feta cheese.
Ingredients
- 1 12" frozen pre-made whole grain pizza crust, thawed
- 4 tsp Italian seasonings, divided
- Olive Oil
- 1 lb. asparagus
- 1 small zucchini
- 1 small yellow summer squash
- 2 oz. feta cheese, crumbled
- 3 oz. tomato paste (half of a 6 oz. can)

Method
Preheat oven to 400 degrees. Place pizza crust on ungreased pizza pan. Rub a light coating of olive oil onto pizza crust, then sprinkle with 2 tsp of the Italian seasonings. Bake for 10 minutes or until golden. While crust bakes, wash asparagus, zucchini, and summer squash. Cut or dice into small pieces. Remove crust from oven and reduce temperature to 350 degrees. Spoon a thin layer of tomato paste onto crust. Top with diced vegetables, then with crumbled feta cheese. Sprinkle remaining 2 tsp Italian seasoning on top. Bake for 10 minutes, then let cool. Slice into 2x2 pieces to serve as appetizers.
Notes: You may dice the vegetables one day ahead. Tastes best when all ingredients are organic.
