Ingredients:
| 2 Tbsp | Unsalted Butter |
| 2 Tbsp | Chopped Shallot |
| ½ | Granny Smith Apple, peeled, cored and finely chopped |
| 14 | Medium Mushrooms, gills removed and discarded, stems removed and finely chopped |
| 2 Tbsp | Olive Oil |
| 4 | Strips Apple Wood Smoked Bacon, cooked, drained and finely chopped |
| ½ cup | Fresh Bread Crumbs From French Baguette |
| 1 Tbsp | Dijon Mustard |
Directions:
Heat butter in a 1 1/2 quart saucepan over medium heat. Add shallots, apple and chopped mushroom stems then cook 4-5 minutes. Meanwhile, in a medium mixing bowl, toss mushrooms in olive oil gently to coat. Add bacon, bread crumbs and mustard to shallot mixture then heat through. Stuff mushrooms with filling and bake 10 minutes, at 350 degrees, on a baking sheet.
