Bacon and Apple Stuffed Mushrooms

The apples and bacon add a great change to stuffed mushrooms. Sweet and savory flavors delight the taste buds and are sure to make these disappear.

  • Servings: 3-4


2 Tbsp Unsalted Butter
2 Tbsp Chopped Shallot
½ Granny Smith Apple, peeled, cored and finely chopped
14 Medium Mushrooms, gills removed and discarded, stems removed and finely chopped
2 Tbsp Olive Oil
4 Strips Apple Wood Smoked Bacon, cooked, drained and finely chopped
½ cup Fresh Bread Crumbs From French Baguette
1 Tbsp Dijon Mustard


Heat butter in a 1 1/2 quart saucepan over medium heat. Add shallots, apple and chopped mushroom stems then cook 4-5 minutes. Meanwhile, in a medium mixing bowl, toss mushrooms in olive oil gently to coat. Add bacon, bread crumbs and mustard to shallot mixture then heat through. Stuff mushrooms with filling and bake 10 minutes, at 350 degrees, on a baking sheet.
