Bacon Cabbage Rolls

Cabbage is packed with a seasoned beef and sausage mixture then rolled up and wrapped in bacon. These rolls are then baked to perfection and ready to eat.
 

Ingredients

  • 1 lb thin sliced bacon
  • 6-8 large cabbage leaves
  • 1 lb lean ground beef
  • 1/2 lb sausage
  • 1 large onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp creole seasoning

Method

Brown ground beef, sausage and onion. Drain drippings, mix in seasonings, and set aside. Wilt each cabbage leaf for just a few seconds in boiling water until pliable. Place a serving size scoop of meat mixture on cabbage leaf in a loaf shape. Place it to one side and center it, then fold in top and bottom, and roll up like a burrito. Wrap two slices of bacon around roll in a spiral and secure with a toothpick. Bake at 350 degrees for 45-60 minutes or until bacon is crispy. Let rolls cool a few minutes before serving.
