Bacon Stuffed Cherry Tomatoes

Simplify your party prep with this recipe for cherry tomatoes with bacon, onion, and Parmesan cheese. Just stuff and chill until ready to serve.

  • Servings: 8

Ingredients:

1 pt Cherry Tomatoes
½ cup Mayonnaise
1 bunch Green Onions, finely chopped
½ cup Freshly Grated Parmesan Cheese
1× 16 oz pkg Bacon, cooked and crumbled

Directions:

Cut tops off cherry tomatos, and using a melon baller, carefully scoop out seeds and pulp. Place each tomato, upside down, on paper towels to drain. Combine remaining ingredients in a small bowl. Stuff each cherry tomato with bacon mixture. Chill at least 2 hours to blend flavors. Line serving tray with parsley to keep tomatoes from rolling around.

Helpful Tips:

I list these as appetizers, and they are, but I always at least double the recipe because sometimes people just want to fill up on these--they are so good.
