Jalapeno peppers add a spicy flavor kick to fried cheese balls.

In a mixing bowl add 2 sleeves crackers crushed very fine. Add all cheeses, onion, jalapenos, salt and pepper. Add one egg to mixture and mix together well. Roll mixture into 3/4 inch balls. Use a melon scoop to keep size consistent, very important when frying right out of the freezer. Crush remaining crackers very fine. Beat other eggs, and add small amount of water to break down. Roll balls in egg and then in crackers. Bag in serving sizes and place in freezer. When ready to use, remove from freezer and place directly into hot oil, 1 1/2-2 minutes, or until golden brown. Sprinkle with just a little salt when they come of the oil.
People just can't get enough of these. An electric mixer with a dough attachment works well, but you can also mix by hand. I use a food chopper on the crackers, jalapenos and onions; it gets them really fine.
