Baked Artichoke and Roasted Garlic Dip

Chopped canned artichokes are combined with mayo, mozzarella, two kinds of parmesan cheeses and roasted garlic, and baked until golden & bubbly.
 

Ingredients

  • 2 cans artichoke hearts, drained and chopped
  • 1 cup mayonnaise
  • 1 cup mozzarella, shredded, plus 1/4 cup for topping
  • 1/4 cup grated parmesan, plus 1/4 cup for topping
  • 1/4 cup shredded parmesan, plus 1/4 cup for topping
  • 3 cloves roasted garlic, mashed to a paste
  • Crackers or toasted bread for dipping

Method

Preheat oven to 350 degrees F. In a large bowl combine ingredients and mix thoroughly. Lightly grease a 9x9" baking dish and pour mixture into dish. Sprinkle with reserved cheeses and bake for 15 to 20 minutes, until golden and bubbly.

 

Notes: I made this dish for a big football game this past Sunday. It was gone very quickly! Serve with crackers or toasted bread slices.
