Baked Potato Skins

Baked potato halves are scooped out, deep fried, filled with cheddar, green onion and bacon pieces, then baked to melt the cheese. They're served with sour cream.
 

Ingredients

  • 6 medium baking potatoes
  • Oil for deep-fat frying
  • 8 oz. shredded cheddar cheese
  • 1/3 cup chopped green onions
  • 1/3 cup bacon bits
  • Sour cream

Method

Preheat oven to 375 degrees. Lightly grease a 9x13-inch baking dish. Pierce potatoes with a fork. Microwave the potatoes on high until they are tender. Cut the potatoes in half lengthwise. Scoop the inside out of the potatoes, until a 1/4 inch shell remains. Heat oil to 365 degrees in a deep fryer or a deep saucepan. Place the potato shells in hot oil, fry until golden brown, about 5 minutes. Drain potatoes on paper towel. Fill the potato shells with cheese, green onion and bacon bits. Arrange in the prepared baking dish. Bake for 7 to 8 minutes, or until the cheese is melted. Serve hot with sour cream.
