BBQ Shrimp


Shrimp in their shells are baked in a mixture of oil, garlic, green chilies, herbs, lemon juice, Worcestershire sauce, paprika, and ground red pepper.



Ingredients:

  • 2 cups corn oil
  • 2 Tbs. chopped garlic
  • 1 4 oz. can chopped green chilies
  • 2 Tbs. dried rosemary (grind first in mortar and pestle for better flavor)
  • 1 Tbs. thyme
  • 1 Tbs. oregano
  • 2 Tbs. basil
  • 1 Tbs. paprika
  • 1/2 Tbs. cayenne
  • Salt and freshly ground pepper
  • Juice of two lemons (about 1/3 cup)
  • 3 Tbs. Worcestershire sauce
  • 2 to 2 1/2 lbs. fresh large shrimp with shell on

Method

In a 4-cup measure, combine oil, garlic, green chilies, rosemary, thyme, oregano, basil, paprika, cayenne, salt, pepper, lemon juice and Worcestershire sauce. Mix well. Arrange shrimp in baking dish. Pour oil mixture over shrimp. Bake at 350 degrees about 20-25 minutes, or until shells are pink and shrimp are done. Serve hot with hot, crusty French bread (plain or sour dough.)

Notes: Sherri's recipe, with a little help from my friends. I don't use the garlic; Tom can't eat it. Penny's trick: About 5 minutes before shrimp is done in oven, pour some beer over (about 1/2 can for the above recipe); continue baking (makes the sauce a little thinner, but less oily.)
