Small green peppers are filled with egg & sprinkled with couscous. After baking they are halved lengthwise and sprinkled with Cheddar cheese.
 

Ingredients

  • 12 very small green bell peppers
  • 12 eggs
  • 1 1/2 cups of couscous, uncooked
  • About 1 cup of shredded cheddar cheese
  • Pico de Gallo (optional)

Method

Wash and dry your bell Peppers. Then cut off the top of each bell pepper. Do not throw away tops, set them aside for later. Gut out the seeds and extra white pulp so that there is nothing left inside the peppers. Crack open one egg and drop inside one pepper (being careful not to break the yolk). then top each pepper with 2 teaspoons of couscous or enough to cover the top generously. Place the tops of the peppers back on. Set them on a baking sheet standing up. Bake for 30 minutes or until egg inside is done. You can tell when the egg inside is done by pushing lightly on top of the couscous. If it feels squishy, or any egg pours out, it is not done, however if it feels firm then it is done. The couscous by this time will have formed into a bread thing. It will not look like normal couscous. When they are done, dispose of the tops, and cut them open lengthwise, so that when you serve them people can see the layers of egg and couscous. Top with a little cheese, salt and pepper, then serve. They make great snacks. For more spice, add pico de gallo on top.

 

Notes: The eggs are baked and not fried, so this snack can be healthy, if you limit the salt and cheese sprinkled on top.
