Beet and Walnut Chevre Sandwich Bites

These mini-appetizers are made by wrapping 2 walnut halves, a beet slice and goat cheese in a strip of prosciutto ham, served warm.
Ingredients
- 3-4 oz soft herb flavor goat cheese (chevre)
- 2 cups walnut halves
- 1 cup small canned/jarred beet slices (about the size of a quarter)
- 2 large slices prosciutto, cut into 1 X 4" strips

Method
Preheat oven to 350 degrees. Spread each walnut half (on the inside) with cheese. Place a beet slice on a walnut, then top with another walnut, creating a "sandwich". Wrap each with a strip of prosciutto and place on a baking sheet. Place in oven for 5-6 minutes (350 degrees). Serve warm.
