Best Blue Cheese Dip
This rich and flavorful dip combines blue cheese with cream cheese, sour cream & mayonnaise, and adds a little tang from lemon juice & vinegar.
Ingredients
- 6 oz cream cheese
- 1 cup sour cream
- 1 cup crumbled blue cheese
- 1 cup mayonnaise
- 1/2 cup finely chopped fresh parsley
- 1/2 tsp salt
- 1 tbsp shallots, minced
- 2 cloves garlic, minced
- Juice 1/2 lemon
- 2 tbsp red wine vinegar
- Half-and-half or light cream (about 1/2 to 3/4 cup)

Method
Mix together cream cheese, sour cream, bleu cheese and mayonnaise. Make sure to break up bleu cheese so it does not clump into a ball. Add parsley, salt, shallots, garlic, lemon juice, and red wine vinegar. Add half and half slowly according to desired consistency.
Notes: Delicious served with hot wings. Can also be served with assorted dippers; celery, carrots, red pepper, yellow pepper, tomatoes, cucumber, good crusty bread. Also delicious as a spread on roast beef sandwiches, hamburgers, and chicken sandwiches.
