Best Ever Fried Chicken Wings

These chicken wings, coated in an herbed flour mixture and then a lemony egg mixture, are fried at a high temperature to brown, and then finished at a lower temperature.
 

Ingredients

  • 1 1/2 - 2 cups of flour
  • 1 1/2 t. salt
  • 2 t. thyme
  • 2 t. paprika
  • 1 egg, beaten
  • 1/3 cup milk
  • 2 T lemon juice
  • 12 chicken wings
  • oil

Method

Combine flour, salt, thyme and paprika. Combine lemon juice, milk and egg. Cut chicken wings into 3 sections. Discard tips. Dredge chicken pieces in flour mixture. Dip in egg mixture. Dredge in flour again. Refrigerate at least 30 min. Heat 1/2" oil in skillet at 375. Place chicken in skillet. Fry until golden brown on each side. Reduce heat to 250; cover and cook for 15 min. Drain.
