Best In Show Chicken Wings

Hot and spicy chicken wings-serve with bleu cheese dressing, carrots and celery.
 

Ingredients

  • Vegetable oil for frying
  • 1/2 cup butter
  • 1/2 cup Louisiana or like hot sauce
  • 1/4 tsp lemon juice
  • 1 pinch of ground pepper
  • 1 pinch of garlic powder
  • 1 1/2 cups flour
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 24 chicken wing pieces

Method

If frozen, defrost and dry chicken wings or pieces thoroughly. Combine flour, cayenne pepper, paprika and salt in a medium bowl. Roll chicken wings or pieces in flour mixture until each are evenly coated and place evenly on cookie sheet and place in refrigerator for 60 minutes. This will help the flour stick to the wings when frying. Preheat vegetable oil to 375 degrees. While preheating the vegetable oil, combine butter, hot sauce, ground pepper, garlic powder and lemon juice in a small saucepan over low heat until the butter has melted and the ingredients have blended well (you may need to whisk occasionally). Once vegetable oil reaches 375 degrees F, carefully drop chicken wings or pieces into hot oil and fry for 10-15 minutes or until some parts of the wings begin to turn dark brown. Remove wings from oil and place on a paper towel to drain. Do not let them sit for long as they need to be served hot. After draining excess oil, put chicken wings into a large bowl and add the hot sauce mixture. Coat all the wings evenly and serve chicken wings with bleu cheese dressing and carrot/celery sticks.

 

Notes: Just try to keep these on the table! You may want to include a roll of paper towels.
