Black Bean and Corn Egg Rolls

Ground turkey and baking instead of frying really makes these flavorful eggrolls a healthier version that can be a great starter or entree.
 

Ingredients

  • 20 oz ground turkey meat
  • 1 can whole kernel corn, drained
  • 1 can black beans, drained and washed
  • 1 can Rotel, drained
  • 1 1/2 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp red pepper
  • 1 8 oz shredded Monterey Jack cheese
  • Handful cilantro, chopped
  • 1 egg, beaten
  • 25 egg roll wrappers
  • Olive oil cooking spray

Method

Preheat oven to 425 degrees. Cook ground turkey and set aside. Combine in a large bowl corn, black beans, Rotel, spices, cheese, ground turkey, and cilantro. Spoon 1/3 cup turkey mixture in center of egg roll wrapper. Fold corner of egg roll over filling and tuck under filling. Fold over left and right sides of egg roll to center. Brush remaining egg roll corner with egg and fold to seal. Place egg rolls on greased baking sheet and spray tops of egg rolls. Bake at 425 degrees for 18 minutes.

 

Notes: My recipe for Mexican egg rolls are a healthy baked entree.
