Black Bean Chili

This hearty chili is full of meat, beans, and vegetables. This recipe is bound to leave you with leftovers, and they say chili gets better the longer it sits.
 

Ingredients

  • 2 packages pork sausage
  • 1 pound lean ground beef
  • 2 1/2 tbsp chili powder
  • 2 tsp ground oregano
  • 1 tsp salt
  • 1 tsp cumin
  • 4 cloves garlic
  • 2 medium onions
  • 1 tablespoon chopped jalape?os
  • 3 14 to 16 oz cans Italian-style stewed tomatoes
  • 2 cans 15 oz black beans, drained

Method

Chop onions, garlic and jalape?os in food processor. In large skillet, start to saute sausage and beef with spices, onions, garlic and jalape?os. Saute until meat is browned. In meantime, puree lightly the tomatoes and set aside. When meat is browned through, drain and put in crock pot. Add tomatoes. Cover and cook on high for 1 hour. Turn heat to low and simmer for 1 to 2 hours more or until onions are tender. Adjust seasoning, if desired. Add the beans and heat through. Serve with sour cream and grated cheese (optional).
