An elegant and hearty appetizer-Italian style tomatoes, white beans and spinach baked with eggs and cheese.
In a large bowl combine the tomatoes and next 3 ingredients plus the egg yolks till well blended. In another bowl beat the egg whites till soft peaks form. Fold egg whites into the tomato mixture along with the cheeses, spinach, lemon zest and pepper. Pour into an oiled shallow 2 quart baking dish. Bake at 350 degrees 15 minutes or till set. Cool completely then cut into small squares and place on a platter. Garnish the platter with basil.
