Bonnie's Dutch Potato Salad

The dressing on this Dutch potato salad is made from scratch in your own kitchen.
 

Ingredients

  • Salt and pepper to taste
  • 8-10 heaping tbsp mayonnaise
  • 2 heaping tsp mustard
  • 1 1/4 cups sugar
  • 3/4 cups flour
  • 2 eggs
  • 2 cups milk
  • 1/4 cup vinegar
  • 5 lbs potatoes; boiled, peeled and diced
  • 1 medium onion, chopped
  • 3-4 stalks celery, chopped
 
Method

Mix together salt, mayonnaise, mustard, sugar, flour, eggs, and milk in a large saucepan over medium heat. Once mixture begins to steam, stir constantly and cook for 1-2 minutes. Remove from heat and immediately add vinegar. Mix thoroughly and allow to cool. Set aside 1 cup dressing to add just before serving. In a large bowl, mix together potatoes, onion, celery, salt and pepper. Stir dressing over vegetables and refrigerate. Before serving, add reserved dressing and mix well.
