Brandied Cranberry Brie Appetizer Cups

These colorful and delcious hot appetizers are made with wonton wrappers filled with brie cheese, cranberry sauce and pecans.

Ingredients:

  • 1/4 cup honey
  • 1/4 cup orange marmalade
  • 1 cup whole berry cranberry sauce
  • 1 tsp ground ginger
  • 1/2 tsp apple or pumpkin pie spice
  • 1 tsp brandy flavoring
  • 24  3-1/4" square wonton wrappers
  • 1 8 ounce brie round, cut into 24 3/4-inch cubes
  • 1 cup chopped pecans

Method

Preheat oven to 350 degrees. Spray 24 miniature muffin cups with buttery flavor nonstick cooking spray. Combine honey and orange juice concentrate in a medium saucepan, bring to a boil. Add cranberry sauce, return to a boil. Reduce heat, simmer about 3 to 4 minutes or until mixture thickens slightly, stirring occasionally. Remove from heat, stir in spices and flavoring. Press one wonton wrapper gently into each muffin cup, allowing ends to extend above. Spray edges of wonton wrappers with buttery flavor nonstick cooking spray. Bake for 12 to 14 minutes or until bottoms of cups are beginning to brown. Place one cube of brie in each cup, top each with about 2 teaspoons cranberry mixture and sprinkle with pecans. Place sheet of aluminum foil over each pan to prevent excessive browning. Bake 5 minutes or until brie is soft. Remove from oven and serve warm.
