Breaded Brussels Sprouts w/ Crispy Proscuitto

This recipe is sure to change your mind about brussel sprouts. Halved sprouts are fried and topped with proscuitto & smoked gouda.
Ingredients
- 3/4 pound brussels sprouts, trimmed
- 1/2 teaspoon salt
- 4 cups vegetable oil, for frying
- 1 1/2 cups all purpose flour
- 2 1/2 cups panko bread crumbs
- 3 eggs
- 1/4 cup water
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup grated smoked gouda cheese
- 1 1/2 cups proscuitto, chopped & cooked until crispy
- 2 Tablespoons flat leaf parsley, chopped

Cut an X into the core of the brussel sprouts, cover with water and add salt in a large saucepan over medium heat. Bring saucepan to a simmer and cook for 5 minutes. Plunge the brussels sprouts in an ice bath until completely cooled and drain completely. Add the vegetable oil to a large cast iron skillet and heat to 325 F degrees. Cut the sprouts in half, then using paper towels, lightly press any remaining moisture from the vegetables. Place the flour and panko crumbs into separate bowls, set aside. In a medium bowl, beat together the eggs and water, set aside. Mix together the salt, pepper, garlic powder and onion powder; sprinkle evenly over the brussel sprouts. Dust the sprouts evenly with the flour then dip into the egg mixture and press into the panko crumbs. Lower the sprouts into the hot oil and quickly brown on both sides until golden. Remove from skillet and drain on paper towels. Sprinkle the grated cheese, chopped proscuitto and parsley over the top of the sprouts and place in a baking dish. Place in a warm oven (250 F degrees) just until cheese melts or about 10 minutes.
