Brie Bundle

A wheel of brie cheese, topped with raspberry chipotle chutney, raisins, and asiago cheese, is wrapped in pastry and baked.
 

Ingredients

  • 1 box Pillsbury Pie Crust (two pie crusts per box)
  • 1/2 cup Raspberry Chipotle chutney
  • 1/2 cup of Raisins
  • 1/2 cup shredded Asiago Cheese
  • 1 egg white
  • 1, 3- to 4" wheel of Brie or Camembert Cheese
  • Crackers and/or pear wedges

Method

Lay out one of the pie crusts. Place the Brie wheel in the middle of the pie crust. Mix the raisins and the chutney together. Put chutney over the top of the brie. Sprinkle the asiago cheese over the top of the brie and chutney. Close the pie crust (or if using a larger wheel of brie, use the other pie crust on top.) Whip the egg white and brush on the outside of the brie to give a glossy finish. Bake for 30 minutes at 350 degrees (or until golden brown.) Serve with crackers or pear wedges.

 

Notes: Serve with crackers or bosc pears.
