Brie with Caramelized Cranberries

A round of brie cheese is placed on a partially baked pie crust and topped with a caramelized onion mixture that contains butter, sugar, pecans, and dried cranberries. The appetizer is baked until warmed, and sliced into wedges to serve.
 

Ingredients

  • 1 wheel Brie cheese (5-6" diameter)
  • 1 large white onion, sliced in thin rings
  • 1 cup pecan halves
  • 1 cup dried cranberries (or more if desired)
  • 1 1/2 sticks butter (3/4 cup)
  • 1 cup white (granulated) sugar
  • 1-9" prepared partially baked pie crust

Method

In a large non-stick skillet, melt butter completely. Add onions and cook until tender, then add sugar, cranberries and pecans. Cook on medium heat until sugar is dissolved, then reduce heat and allow to simmer on low heat approximately 30 minutes, stirring frequently. Mixture will begin to caramelize. Remove from heat. Place wheel of brie in the middle of partially-baked pie crust, pour cranberry mixture over top and bake in a 325 degree oven for 20 minutes, or until brie is softened all the way through and pie crust is golden brown. Remove from oven and slice the wheel of brie (but not the crust) with a sharp knife several times, so that the melted brie will ooze together with other ingredients. Allow to cool slightly, and then cut into thin wedges to serve. (Cranberry pecan mixture may be made a day ahead.)
