These button and crimini mushrooms are baked and then stuffed with sourdough bread, mozzarella cheese and green onions. What a way to start off dinner.

  • Servings: 6-8 persons


8 oz Button Mushrooms, stemmed and cleaned
8 oz Crimini Mushrooms, stemmed and cleaned
3 Tbsp Olive Oil
4-5 Pieces Sourdough Bread, small dice
1 cup Mozzarella Cheese, shredded
2 Chives, green and white parts, minced
½ tsp Salt, additional for seasoning
Pepper, to taste


Heat one tbsp olive oil in a medium pan over medium-high heat and add mushrooms. Do not touch or season at this time. Let mushrooms brown 6-8 minutes then season with both salt and pepper. Remove mushrooms, let cool and drain on a paper towel. Preheat oven to 325 degrees. In a medium bowl, combine bread, cheese, chives, salt and pepper. Drizzle in remaining olive oil and toss mixture to coat evenly. Add one tbsp of mixture to each mushroom. Place mushrooms on a baking sheet and bake 15-20 minutes, or until golden crisp. Let cool slightly before serving.
