Bruscetta

Slices of sourdough bread are baked with a mixture of tomato, onion, olive oil, oregano, basil, parsley, garlic and parmesan cheese.
 

Ingredients

  • 4 medium tomatoes, seeded and chopped
  • 1/2 sweet onion, chopped
  • 2 Tablespoons olive oil
  • 1 teaspoon dried or 2 Tablespoons chopped fresh oregano
  • 1/4 teaspoon dried or 1 Tablespoon chopped fresh basil
  • 1/2 teaspoon dried or 2 teaspoons chopped fresh parsley
  • 1 teaspoon chopped garlic
  • 1 loaf (long and narrow) sourdough bread, sliced
  • 1/4 cup freshly grated parmesan cheese

Method

Preheat oven to 400. In a medium bowl, combine tomatoes, onion, olive oil, herbs, and garlic. Place bread slices on a baking sheet; top with tomato mixture. Sprinkle with cheese. Bake for 8 - 10 minutes, or until cheese is melted and bread is golden brown. Cool slightly before serving.

 

Notes: This recipe can also be served cold. Simply mix all ingredients except cheese and bread. Place in a serving bowl and serve with toasted bread or crackers. The cheese is eliminated when served cold. Either way, yummy!
