These cute and colorful appetizers are quick and easy to make, using cherry tomatoes stuffed with basil-wrapped mozzarella.

1 pt Cherry Tomatoes
2 Mozzarella Cheese Sticks
16 Small Fresh Basil Leaves
Extra Virgin Olive Oil
Sea Salt


Scoop out and discard pulp and stem of the cherry tomatoes. Invert tomatoes onto paper towels to drain. Sprinkle with sea salt. Slice each mozzarella stick into eight rounds. Turn tomato halves over and drizzle with oil. Wrap a leaf of basil around a slice of cheese, like a taco, then insert into a tomato.

Caprese, or salad in the style of Capri, is a simple salad from the Italian region of Campania, made of sliced fresh buffalo mozzarella, tomatoes and basil, seasoned with salt and olive oil. In Italy, unlike most salads, it is usually served as an antipasto (starter), not a contorno (side dish).
