Charcuterie-Style Stuffed Mushrooms


Mushrooms stuffed with garlic, parsley and chives, served on crusty slices of French or Italian bread.



Ingredients:

  • 6 extra large stuffing mushrooms
  • Sea or kosher salt and freshly ground black pepper to taste
  • 4 Tablespoons unsalted butter, softened
  • 4 Tablespoons olive oil
  • 6 slices of a French or Italian baguette
  • 2 large cloves garlic, finely chopped
  • 2 Tablespoons olive oil
  • 4 Tablespoons finely chopped fresh parsley
  • 1 Tablespoons olive oil
  • 2 Tablespoons finely chopped fresh chives

Method

Preheat oven to 375 degrees F. Blend together the softened butter, olive oil, garlic, parsley and chives. Add salt and freshly ground pepper to taste. Remove stems from the mushrooms and reserve for another use. Fill mushroom caps with the prepared garlic mixture and bake the stuffed mushrooms on a buttered baking sheet for 12 to 15 minutes or until mushrooms are cooked but still hold their shape. While the mushrooms are baking, brush both sides of the bread slices with olive oil and brown them on both sides in a skillet over moderately-high heat. Serve one large mushroom and one slice of toast per person.

Notes: Great recipe for weekend or special occasion dinners. I often double the recipe and serve it as an entree with a salad or vegetable on the side.
