This cheese and chicken dip can be a meal in and of itself. Add your favorite toppings and dig in.
Boil a whole chicken. Let the chicken cool off to the side. While it is cooling, in a sauce pan add Velveeta and Rotel stirring until it is well mixed. Add milk to thin it if need be. After chicken is cooled, de-bone it and shred chicken to bit size pieces. In a casserole dish place a layer of chips, a layer of chicken, then cheese dip. Keep doing this until it's all gone. Place in a 375 degree oven until cheese on top is nice and golden brown.
