Cheesy Tomato Bites

Sliced tomatoes are sprinkled with feta cheese and baked in a pastry crust flavored with dill weed, spread with Dijon mustard, and sprinkled with cheddar.
Ingredients
- Prepared pastry for 9" single-crust pie
- 3 Tablespoons olive oil
- 1/2 teaspoon onion powder
- 1 1/2 teaspoon dill weed
- 1 1/2 pounds tomatoes
- 1 teaspoon kosher salt
- 1/4 cup dijon mustard
- 1 cup shredded cheddar cheese
- 1 cup crumbled feta cheese
- 2 cloves fresh garlic, minced
- 2 Tablespoons fresh parsley, minced
- 2 Tablespoons fresh basil, minced

Place prepared pie crust in 9" pie pan. Combine 1 tablespoon of the olive oil, onion powder and dill. Brush on surface of pie crust and bake at 350 for 12 minutes. Cool. Meanwhile, slice tomatoes and place in colander. Sprinkle with Kosher salt and let drain for 20 minutes. Spread mustard on bottom of cooled pie crust. Sprinkle cheddar cheese on mustard. Layer tomatoes on top of cheese, sprinkle feta cheese on top of tomatoes. Bake, uncovered in 350 degree oven for 35 minutes. While appetizer bakes, combine remaining 2 Tablespoons olive oil, garlic, parsley, and basil. When appetizer comes from oven, spoon olive oil-herb mixture over the top. Let rest for 5 minutes, cut in wedges and serve.
Notes: This appetizer has such fresh, unique flavors. It's easy to put together, and a small wedge is very satisfying. I first made this using a big surplus of tomatoes from the garden. I think fresh herbs perk-up the flavor of any food. This is a simple recipe that tastes "gourmet".
