Cheesy Tomato Bruschetta


This warm appetizer tops toasted slices of baquette with a roma tomato mixture that has mozzarella & parmesan cheeses plus oil & vinegars.



Ingredients:

  • 1 1/2 cups seeded and chopped ripe roma tomatoes (4-5 roma tomatoes)
  • 1/4 cup red onion, finely chopped
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon red wine vinegar
  • 1/2 cup finely shredded mozzarella cheese
  • 2 Tablespoons shredded parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 baquette loaf
  • 1 clove of garlic, cut in half

Method

Mix first 9 ingredients in medium bowl. Cover and refrigerate at least 2 hours. To serve: Slice baquette into 1/2-inch thick slices. Brush both sides of bread slices lightly with additional olive oil. Broil bread slices for approximately 1-3 minutes on each side to toast. Gently rub both sides of warm, toasted bread with cut side of garlic clove. Top bread slices with tomato mixture, place on baking sheet. Broil for 1-3 minutes to warm, and for cheese to slightly melt.

Notes:

Number of servings: 4-6 (2 slices per serving)
