Chesapeake Bay Crab Cakes

Lump crabmeat is combined with egg, mayonnaise, green pepper, onion, pimiento, mustard and Old Bay seasoning, then shapeded into patties and skillet-fried until golden.
 

Ingredients

  • 1 lg. egg, slightly beaten
  • 2 T mayonnaise
  • 2 T chopped green pepper
  • 1 sm. jar diced pimento
  • 1-1/2 T. chopped purple onion
  • 1-1/2 tsp. lemon juice
  • 1 t. Dijon mustard
  • 1 t. Old Bay seafood seasoning
  • 1/2 cup breadcrumbs
  • 1 lb. lump crabmeat
  • Vegetable cooking spray

Method

Combine first 8 ingredients. Gently fold in breadcrumbs and crabmeat, being careful not to break up lumps of crabmeat. Shape into 12 patties. Coat the skillet with cooking spray. Cook over medium-high heat about 4 minutes, turning once.
