Chesapeake Crab Melt Crispers

These appetizers combine crabmeat and mild Swiss cheese placed atop a puree of dried tomatoes that are spread on English muffin halves or split pita rounds.
 

Ingredients

  • 1/2 pound Crab Meat, fresh or canned
  • 1/4 pound Jarlsberg Or Swiss Cheese, chopped
  • 1/4 cup Mayonnaise
  • 1/4 teaspoon Dry Mustard
  • 1/2 cup sliced black olives
  • Old Bay Seasoning (to taste)
  • 1/2 cup sun-dried tomatoes in oil
  • 4 pita bread rounds, split, or English muffins, split

Method

Chop crabmeat. In small bowl, with fork, mix crabmeat, cheese, mayonnaise, dry mustard, Old Bay Seasoning and coarsely ground black pepper; set aside. Drain oil from tomatoes. In a food processor, process the tomatoes until they form a paste. Spread the paste on the split pitas or muffin halves; cut into wedges. Spread 1 heaping teaspoon crabmeat mixture on each English muffin wedge. Place on cookie sheets; top with cheese. If not serving right away, cover and refrigerate. ABOUT 15 MINUTES BEFORE SERVING: Preheat broiler. Broil about 2 to 3 minutes or until cheese melts. Top each crisper with a slice of ripe olive. Arrange crispers on a plate and garnish. Serve immediately.
