Chicken Cakes with Remoulade Sauce

Serve these chicken cakes with the creamy mayonnaise sauce for a first course appetizer. Or, serve as a main-dish for a luncheon.
 

Ingredients

  • 2 Tbsp butter
  • 1/2 med. size red bell pepper, diced 4 green onions, thinly sliced
  • 1 garlic clove, pressed
  • 3 C chopped cooked chicken
  • 1 C soft breadcrumbs
  • 1 large egg, lightly beaten
  • 2 Tbsp mayonnaise
  • 1 Tbsp Creole mustard
  • 2 Tsp Creole seasoning
  • 1/4 C vegetable oil
  • Remoulade Sauce
  • 1 C mayonnaise
  • 3 green onions, sliced
  • 2 Tbsp Creole mustard
  • 2 garlic cloves, pressed
  • 1 Tbsp chopped fresh parsley
  • 1/4 Tsp ground red pepper

Method

Melt butter in a large skillet over med. heat. Add bell pepper, green onion and garlic and saute 3-4 min. or until tender. Stir together bell pepper mixture, chicken, and next 5 ingredients. Shape mixture into 8 (3 1/2") patties. Fry 4 patties in 2 Tbsp hot oil in a large skillet over med. heat 3 min. on each side or until golden brown. Drain on paper towels. Repeat procedure with remaining 2 Tbsp oil and patties. Serve immediately with Remoulade Sauce. Sauce: Stir together first 6 ingredients until well blended.
