Chicken Newburg with Puff Pastry Shells

Chicken Newburg is a high class meal that is very simple to prepare and impress with.
Ingredients
- 4 boneless skinless chicken breasts
- 2 14 oz cans chicken broth
- 4 tbsp butter
- 1/2 cup flour
- 2 tsp paprika
- 1/2 tsp white pepper
- 1 tsp salt
- 1/4 cup dry sherry, not cooking
- 1 tbsp fresh lemon juice
- 1 1/2 cup half and half
- 2 tbsp fresh parsley, chopped
- 2 pkgs puff pastry shells

Method
Bake shells according to package directions and set aside. In medium size saucepan, place chicken breasts side by side in 1 layer. Pour broth over, bring to a boil and simmer for 20 minutes. Remove chicken to cool, coarse chop and set aside. Strain broth into a bowl. In pot, add butter and melt over medium heat. Stir in flour, cooking for 1 minute. Return broth to pot and stir until thickened and smooth. Stir in half and half, sherry, lemon juice, salt, pepper, and parsley. Spoon into pastry shells and serve.
