Chicken Olive Bruschetta

A hearty hot appetizer--chicken, olives, and tomatoes sauteed in olive oil and served on sliced bread with fresh basil and Parmesan cheese.
 

Ingredients

  • 1 lb chicken
  • 1 cup olives (mix Kalamata and black cured, try and stay away from canned)
  • 1/2 cup white onion
  • 3 large garlic cloves
  • 1 cup roma tomatoes, seeded
  • 1/4 cup olive oil
  • 1 loaf sourdough bread slice in 3/4 to 1 inch slices
  • 1/2 cup to 1 cup chopped fresh basil and flat leaf parsley
  • 1 cup Parmesan cheese
  • Salt and pepper to taste

Method

Chop finely chicken, olives, onions, garlic and tomatoes. Add 1-2 tablespoons olive oil to skillet. Heat and saute above ingredients until cooked through. Brush sliced bread on both sides with olive oil. Broil until golden brown. Let cool then rub with peeled raw garlic on one side. Top each slice of bread with chicken mixture then sprinkle with Parmesan cheese. Put back under broiler until cheese is melted. Remove from oven and garnish with basil and parsley. Plate and serve.
