Chilled Red Potato Salad with Smoked Salmon

Smoked salmon in a red potato salad is sure to be a hit at any function.
Ingredients
- 2 1/2 pounds small unpeeled red potatoes
- 1/2 cup diced red onion
- 1/2 cup diced celery
- Dressing:
- 1 cup mayonnaise
- 2 tablespoons milk
- 2 tablespoons white vinegar
- 1 teaspoon sugar
- 3/4 teaspoon salt
- Fresh ground black pepper
- 1 pound boneless skinless fully cooked smoked salmon, cut into 1 inch pieces
- 1 cup lightly packed fresh arugula, cut into 3 inch pieces for garnish

Method
Cover skin on potatoes in water and cook for 20 minutes or until just tender, then drain. Let cool for 5 minutes. Cut potatoes into 3/4-inch pieces, making about 6 cups. Place the potatoes in a large bowl and fold in onion and celery. In a separate bowl, whisk dressing ingredients until well blended. Spoon over warm potatoes and toss to coat evenly. Fold in smoked salmon and cover and refrigerate for several hours. Garnish with Arugula sprigs before serving.
