Chipolte Turkey Satay


Strips of turkey breast are marinated in a mixture that includes bourbon, soy sauce, brown sugar, chipotle peppers, cilantro and lime juice.



Ingredients:

  • MARINADE:
  • 1/2 cup bourbon
  • 1/3 cup soy sauce
  • 1 cup brown sugar
  • 1 or 2 finely chopped chipotle chiles with adobo sauce (canned) - use more or less depending on the heat you want
  • 3 to 4 cloves garlic, minced (more or less, depending on your taste)
  • 1/4 cup fresh lime juice
  • 1 tsp ground black pepper
  • 1/2 tsp salt (kosher used here)
  • 1/2 cup fresh cilantro, finely chopped
  • KABOBS:
  • 1 lb boneless turkey breast, cut into strips about 3-inches long and 3/8-inch thick
  • 1 tsp. cornstarch
  • Cilantro and cherry tomatoes for garnish

Method

Mix marinade ingredients together and stir until sugar and salt dissolve. (May want to heat a little in the microwave for 10 to 15 seconds to allow the salt and sugar to dissolve. Let cool.) Set aside 1/3 cup of marinade. Into a quart bag, put the turkey strips and remaining marinade and let marinate for 1 hour in fridge. (Meanwhile soak skewers in water first, if they're bamboo or wood). Skewer turkey, weaving it onto skewers. Throw out the marinade that the turkey has been in. Grill turkey for 3 to 4 minutes per side until done all the way through. Mix reserved marinade with cornstarch and simmer on stove until thickened. Drizzle, SPARINGLY over kebobs to taste (sauce is potent!) Garnish with cherry tomatoes and cilantro. Enjoy!
