Chipotle Chorizo Queso Dip
Texas style chorizo, chipotle peppers, tomatoes with chiles and cheese come together to make this zesty dip.
Ingredients
- 8 oz Texas style chorizo, browned and well drained
- 1 lb processed cheese spread, cut into cubes
- 10 oz can tomatoes with green chiles, undrained
- 1 canned chipotle pepper with adobo sauce, finely chopped
- 4 oz finely shredded Colby Monterey Jack blend cheese
- Tortilla chips for dipping

Method
Place processed cheese and undrained tomato and chili mixture in a medium saucepan. Melt cheese over medium heat, stirring occasionally. Add remaining ingredients, except tortilla chips. Continue to heat until all cheeses are melted and ingredients blended together. Serve warm with tortilla chips.
