Corn Salsa

This tangy and colorful salsa contains corn, black olives, bell peppers, red onion & avocado in a dressing of oil, vinegar & lemon juice with garlic.
Ingredients
- Dressing:
- 5 garlic cloves, minced
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 2 tbsp apple cider vinegar
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- Salad:
- 1 16 oz bag frozen petite white whole kernel corn, thawed and drained
- 2 cans sliced black olives
- 1 or 2 bell peppers
- 1 red onion
- 1 or 2 jalapenos, chopped
- 1 or 2 tsp cilantro, fresh chopped
- 4 medium avocados
- Tortilla chips (to serve with)

Prepare dressing; set aside. Combine the first 6 salad ingredients in large bowl. Add dressing. Cover & refrigerate. (It gets better the longer it sits in the fridge.) When ready to serve chop and add avocados. Serve with tortilla chips for dipping.
Notes: You can also spoon this on top of salad greens or as a side dish with fish or meat.
