This tangy and colorful salsa contains corn, black olives, bell peppers, red onion & avocado in a dressing of oil, vinegar & lemon juice with garlic.
Prepare dressing; set aside. Combine the first 6 salad ingredients in large bowl. Add dressing. Cover & refrigerate. (It gets better the longer it sits in the fridge.) When ready to serve chop and add avocados. Serve with tortilla chips for dipping.
Notes:
You can also spoon this on top of salad greens or as a side dish with fish or meat.
