Corn Salsa


This tangy and colorful salsa contains corn, black olives, bell peppers, red onion & avocado in a dressing of oil, vinegar & lemon juice with garlic.



Ingredients:

  • Dressing:
  • 5 garlic cloves, minced  
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbsp apple cider vinegar
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper  
  • Salad:
  • 1 16 oz bag frozen petite white whole kernel corn, thawed and drained
  • 2 cans sliced black olives
  • 1 or 2 bell peppers
  • 1 red onion
  • 1 or 2 jalapenos, chopped
  • 1 or 2 tsp cilantro, fresh chopped
  • 4 medium avocados
  • Tortilla chips (to serve with)

Method

Prepare dressing; set aside. Combine the first 6 salad ingredients in large bowl. Add dressing. Cover & refrigerate. (It gets better the longer it sits in the fridge.) When ready to serve chop and add avocados. Serve with tortilla chips for dipping.

Notes: You can also spoon this on top of salad greens or as a side dish with fish or meat.
