Ingredients:
| 2× 15 oz cans | Black Beans |
| 1× 15 oz can | Corn Kernels, drained |
| 1 | Small Red Onion, diced |
| ½ | Red Pepper Diced |
| 2 tsp | Minced Jalapeno Pepper |
| Juice of 1 Lime | |
| 1 Tbsp | White Vinegar |
| 1 Tbsp | Olive Oil |
| 1 cup | Fresh Chopped Cilantro |
| 1 Tbsp | Sugar |
| ½ tsp | Lime Zest |
| Salt, to taste |
Directions:
Combine all ingredients in a large bowl, mix well and let rest at room temperature for at least an hour before serving. Serve with tortillia chips.
