Cowboy Caviar Black Bean Salsa

Looking to lighten up your party food? This healthy dip features black beans, corn, onion and jalapeno peppers.

  • Servings: 15

Ingredients:

2× 15 oz cans Black Beans
1× 15 oz can Corn Kernels, drained
1 Small Red Onion, diced
½ Red Pepper Diced
2 tsp Minced Jalapeno Pepper
Juice of 1 Lime
1 Tbsp White Vinegar
1 Tbsp Olive Oil
1 cup Fresh Chopped Cilantro
1 Tbsp Sugar
½ tsp Lime Zest
Salt, to taste

Directions:

Combine all ingredients in a large bowl, mix well and let rest at room temperature for at least an hour before serving. Serve with tortillia chips.
