Cranberry Apricot Baked Brie

This gourmet appetizer is the perfect way to start off a party. All of your guests will be impressed by the presentation and by how delicious this snack is.
 

Ingredients

  • 2 tbsp of unsalted butter
  • 1/2 white onion, finely minced
  • 1 cup dried cranberries
  • 2 tbsp of apricot preserve
  • 1 8 oz round wheel of Brie, room temp
  • 1 sheet of puff pastry, thawed
  • 1 egg + 1 tbsp of water, for egg wash
  • salt and pepper to taste
 
Method

Preheat oven to 400 degrees. To start, heat butter in a pan over medium heat. Once butter is melted, add the onions and salt and pepper to taste. Allow onions to sweat in butter for five-ten minutes or until translucent.* Add cranberries to pan and allow to cook for an additional 2-3 minutes. Remove from heat and set aside. Take thawed pastry dough and place it on a baking sheet pan. Mix egg with a little water to form an egg wash. Brush egg wash around the edges of the inside of the dough. Place the wheel of Brie in the center of the puff pastry dough. Evenly spread the apricot preserve on the top of the Brie. Then, carefully spoon the cranberry onion mixture over the preserve, covering the top of the Brie in an even 1 inch layer. Once the Brie is dressed, fold the edges of the puff pastry by lifting the four edges of the dough to the center of the Brie, crimping them together to form a seal. Brush the remaining egg wash evenly on the outside of the puff pastry dough. Place in the 400 degree oven and allow to bake for 15 minutes, or until golden brown. Remove from oven, and allow to rest for 10-15 minutes. Serve with favorite crackers, sliced French bread and sliced apples or pears.

 

Notes: *Note we do not want the onions to caramelize so make sure they are stirred frequently and cooking over a med/low heat*
