Cranberry Baked Brie with Honey

A mixture of dried cranberries, almonds, honey and thyme is spooned on a round of brie, then wrapped in purchased puff pastry and baked until golden.

⅓ cup Dried Cranberries, chopped
¼ cup sliced Almonds
¼ cup Honey
1½ tsp Chopped Fresh Thyme
¼ tsp Salt, divided
⅛ tsp Freshly Ground Pepper
1 Sheet Frozen Puff Pastry, thawed
1 Wheel or Round of Tripple-cream Brie Cheese
1 Egg White


Preheat oven to 400 degrees. Combine cranberries, almonds, honey, thyme, 1/8 teaspoon salt, and pepper in a medium bowl; set aside. Roll puff pastry to a 12-inch square. Trim top rind off Brie and center the cheese on the pastry, trimmed side up. Top with fruit-nut mixture. Beat egg white and 1/8 teaspoon salt in a small bowl and brush some of the egg wash along pastry edges. Gather dough up around Brie, twisting and forming into a topknot. Chill in freezer for 15 minutes. Brush pastry lightly with egg wash and place on a parchment-lined baking pan. Bake for 35 minutes, or until golden.
