Creamy Baked Mushrooms with Parmesan

Mushrooms make an elegant side dish when baked with a creamy Parmesan sauce.Ingredients
- 1 tablespoon butter
- 1 pound sliced mushrooms
- 1/2 cup sour cream
- 1 tablespoon all purpose flour
- 1/4 teaspoon salt or to taste
- Freshly ground black pepper to taste
- 1/2 cup grated Parmesan cheese, divided
- 1/4 cup chopped flat leaf parsley, divided

Preheat oven to 425 degrees. Melt butter in a heavy skillet over medium high heat then add mushrooms and saute 2 minutes. In a small cup, stir together sour cream, flour, salt and pepper. Stir into mushrooms and heat until bubbly then remove from heat. Reserve 3 tablespoons of Parmesan cheese and stir remaining into mushrooms. Reserve 1 tablespoon chopped parsley and stir remaining into mushrooms. Transfer mixture to a shallow baking dish or gratin dish, or 4 individual gratin dishes. Sprinkle each evenly with reserved Parmesan and parsley. Bake 10 minutes or until golden and bubbly.
Notes: These are so simple, yet are fabulous with a sizzling grilled steak and a tossed salad.
